HAPPY NATIONAL PANCAKE DAY
SWEET POTATO PANCAKES
3/4 cup sifted all-purpose flour
3/4 cup sifted whole wheat flour
4 teaspoons baking powder
1 teaspoon salt
1/4 cup light brown sugar
1/2 teaspoon ground nutmeg1 cups mashed cooked sweet potatoes
2 eggs, beaten
2 cups milk
1/4 cup butter, melted
Preparation:Peel and cut sweet potato in to 1 inch squares. place in a bowl and cover with water, microwave tell soft about 6 minutes. Drain the water and mash the potato up on a plate with a fork.
Sift dry ingredients into a mixing bowl. Combine remaining ingredients; add to flour mixture, stirring just until dry ingredients are moistened. Drop by spoons onto hot greased griddle or skillet and fry, turning once, until browned on both sides.
